Filipino Food and Recipes - Kilawin na Tangigue
1 kilo fresh tangigue fillet, cut into cubes
3 pcs. Medium ripe tomatoes, sliced
2 pcs. thumb-sized Ginger, sliced into thin strips
2 pcs. Siling Pangsigang, sliced thinly
2 regular sized onion, sliced
Salt to taste
4 medium sized Calamansi, extract juice and set aside
Cane Vinegar
Cooking Instructions:
1. In a crystal bowl, soak fish fillet in cane vinegar for 15 minutes. Drain fish fillet after 15 minutes.
2. Using a wooden ladle, add in all ingredients and mix lightly with fish fillet. Add salt. Add a table spoon of vinegar for a more sour taste.
Note: Pure coconut milk may be added if desired.
Do not use silver utensils when working with vinegar.
